Piña Colada Parfait

Piña Colada Parfait (Without the Vacation-Level Effort)

If you want something that tastes like dessert but still fits your macros and doesn’t require a ring light and a food stylist, this one’s for you. This Piña Colada Parfait is creamy, crunchy, actually filling, and takes about five minutes to throw together between packing lunches and asking small humans to put their shoes on for the 47th time.

It’s kid-friendly, macro-friendly, and zero percent “punishment food”—just one less thing you have to overthink when you want a breakfast or snack that feels fun but still works with your goals.

Ingredients (Makes 2 Servings)

  • 1 container Chobani Fat Free Toasted Coconut yogurt
  • 1 container Yoplait Light Vanilla yogurt
  • About 1 cup fresh diced pineapple (fresh really does taste better than canned here)
  • About 1/3 cup Kodiak Cookie Butter Protein Granola
  • Toasted coconut flakes (a small handful)
  • About 1/2 tablespoon toasted coconut flakes for topping

Step-by-Step Instructions

1. Mix the yogurts. In a small bowl, stir together the Chobani Fat Free Toasted Coconut yogurt and the Yoplait Light Vanilla yogurt until it’s totally combined. This combo is the magic—it keeps the protein boost from the Greek yogurt but gets rid of that chalky vibe and makes it taste way more indulgent.

2. Prep your pineapple. Dice your fresh pineapple into small bite-size pieces. You’re aiming for about 1 cup total. Fresh makes a big difference here—the flavor is brighter and less syrupy than canned.

3. Start the first layer. In two clear glasses or jars, add a layer of pineapple to the bottom of each.

4. Add the yogurt. Spoon a layer of the yogurt mixture over the pineapple in each glass.

5. Add the crunch. Sprinkle Kodiak Cookie Butter Protein Granola over the yogurt layer. This is what makes it actually filling instead of “I’m hungry again in 20 minutes.”

6. Repeat the layers. Add another layer of pineapple, then another layer of the yogurt mixture, and finish with a sprinkle of granola on top.

7. Finish with toasted coconut. Top each parfait with about 1/2 tablespoon of toasted coconut flakes. If you like things extra coconut-y, add a little more—no perfection police here.

8. Serve or chill. Eat right away for maximum crunch, or let it hang out in the fridge for a bit if you’re assembling ahead. The granola will soften slightly but it’s still delicious.

Ashlee’s Notes

  • The yogurt combo matters. I’ve tried to “be good” and do straight Greek yogurt. It always tastes a little like flavored chalk. Mixing in the Yoplait Light Vanilla keeps the macros in check but makes it creamy and dessert-y instead of sad.
  • Fresh pineapple is worth it. Canned works in a pinch, but fresh gives you that bright, tropical thing we’re actually going for. If you only have canned, drain it really well so it doesn’t water everything down.
  • Protein that actually fills you up. The Kodiak granola brings protein to the party, so this isn’t one of those “air and vibes” parfaits. It holds you over whether you’re using it as breakfast, a snack, or a late-night “I’d like something sweet that isn’t an entire sleeve of cookies” situation.
  • One less thing to think about. I like to pre-chop pineapple and keep the yogurts together on one shelf so I can grab, layer, and be done in five minutes. No overthinking, no tracking down 12 ingredients—just a small system that makes mornings and snack time easier.
