My Everyday Breakfast Scramble

Hero photo

Okay, I’m going to be upfront with you: this is my absolute favorite breakfast. It’s high protein, low calorie, low fat, and somehow still tastes like something you’d actually want to eat at 7am. It keeps you full for hours. We’re talking full-until-lunch, no-sad-desk-snack full. It’s basically a breakfast burrito without the tortilla — all the flavor, none of the tortilla guilt. And if you really want to go full breakfast mode, it pairs perfectly with air fryer breakfast potatoes. You’re welcome.

What You’ll Need

  • 1 whole egg + 2 egg whites
  • Splash of milk
  • ½ tbsp I Can’t Believe It’s Not Butter
  • Diced onions (to your heart’s desire)
  • ~2 oz diced ham (1 serving)
  • Reduced fat fiesta cheese (~2 tbsp)
  • Salt and pepper to taste
  • Valentina hot sauce, pico de gallo, and/or salsa for topping (optional but highly recommended)

Let’s Make It

Sautéing onions and ham
  1. Dice your onions — as many as you want, no judgment — and sauté them in ½ tbsp of I Can’t Believe It’s Not Butter. Let them get a little soft and golden, then add your diced ham (about 2 oz / 1 serving). Let that all cook together for a bit.
  2. While that’s going, scramble your 2 egg whites and 1 whole egg with a splash of milk in a bowl.
Adding egg mixture to the pan
  1. Pour the egg mixture into the pan with the onions and ham. Season with salt and pepper to taste.
  2. Cook everything together over medium-high heat until done.
  3. Turn off the burner and sprinkle about 2 tbsp of reduced fat fiesta cheese on top. Cover the pan and let the cheese melt. (Yes, turning off the heat is intentional. Residual heat melts the cheese perfectly without turning it into a rubbery crime.)
Finished scramble

Slide this onto a plate next to some air fryer breakfast potatoes and you’ve got a full breakfast situation that required minimal effort and zero tortillas. I personally top mine with Valentina hot sauce, pico de gallo, and salsa — sometimes all three at once, because I contain multitudes. It’s got all the energy of a breakfast burrito without the carb math. Breakfast burrito vibes, none of the regret. You’re eating smart and it tastes like a treat. That’s the whole game.

Finished scramble topped with salsa

Seriously — this scramble keeps you full for hours. No mid-morning snack spiral, no staring into the fridge at 10am wondering where it all went wrong. It’s fast, it’s filling, it’s got over 27 grams of protein, and you made it yourself on a busy morning like the capable person you are. Add it to the rotation. You’ve got this.
